Like my traditional pecan sandies, this gluten-free version is stuffed with toasted pecans and a whole lot of butter. The sandy nature and rich buttery flavor of this cookie would make the Girl Scouts really jealous! These cookies are best friends with coffee, tea, or a big glass of milk.
